Ingredients
4 oz streaky bacon
1 head of chicory (if available)
4 sticks of celery
1 (7oz) can sweetcorn (drained)
3 oz salted peanuts
4 oz ham (diced )
1 (5 fl oz) carton natural yogurt
1 tbspn. Lemon juice
Salt and pepper
- Remove rinds. Chop bacon and fry until crisp. Leave aside until cold.
- Cut the chicory into rings (using a stainless steel knife to avoid discolouring) and chop the celery. Place in a salad bowl.
- Add the sweetcorn, peanuts, bacon and ham to the salad bowl.
- Just before serving, stir into the salad the yogurt, lemon juice and salt and pepper. Toss well together
