Ingredients
1lb tomatoes
Salt to taste
3 large Bramley cooking apples
3 large onions
1 pint cider vinegar
1lb sugar
½ tsp. cayenne pepper
1 tsp. ground cloves
1 tsp. ground cinnamon
Red or green chillies
Method
- Peel tomatoes, slice and put in a bowl with a sprinkling of salt. Allow to stand overnight.
- Next day, put tomatoes into a strong saucepan. Add peeled and sliced apples and onions, vinegar, sugar, cayenne and spices. Bring to the boil and simmer until the sugar is dissolved and fruit and vegetables tender.
- Turn into warmed jars and add one or two red or green chillies to each one. Allow to cool then cover tightly with vinegar – proof tops and store in cool dark place.
