Ingredients
4 roll – mop herrings
1 dessert apple (peeled & diced)
2 oz onions (finely chopped)
½ lb cold cooked potato (diced)
2 oz pickled cucumber (diced)
2 (5 fl oz) cartons natural yogurt
2 hard boiled eggs
4 oz cooked beetroot (diced)
Chopped parsley
Method
- Shred the herrings; place in a bowl with the apple, onions, potato and pickled cucumber. Add the yogurt and stir together. Turn into a serving dish.
- Slice the hard – boiled eggs and arrange in rows alternating with the diced beetroot and parsley.
