Spicy Milk Loaf

Ingredients

450g (1lb) self – raising flour
¼ tspn. salt
1 tspn. cinnamon
½ tspn. ginger
1 tspn. mixed spice
150g (6oz) mixed dried fruit
100g (4oz) soft brown sugar
2 tbspns. honey
75g (3oz) butter
280ml ( ½ pint) of milk

 

  1. Line and grease a 900g (2lb) loaf tin
  2. Sieve flour, salt & spices together then stir in dried fruit.
  3. Put sugar, honey and butter in a pan and heat gently until melted then mix with the milk into the flour to give a fairly sticky consistency.
  4. Turn the mixture into the prepared tin and bake in oven for about 1 hour until a skewer inserted in the centre comes clean out clean. (170°C/325°F/Gas Mark 3).

To finish loaf, decorate the top with water icing and preserved fruit.
