Ingredients
1lb. mashed potatoes (weighed after cooking)
2 ½ oz. plain flour
1 oz. margarine or cooking fat
½ tspn. salt.
- Add the fat and salt to the potatoes, then very lightly work in the flour, handling as little as possible.
- Turn out onto a floured board, divide into four or five equal portions.
- Roll each portion out very thinly into a circle, prick with a fork, then cut into quarters.
- Bake on a hot girdle for about 5 minutes, turning when half cooked.
