Ingredients
Base
1 cup crushed digestive biscuits
½ cup demerara sugar
½ tbspn self raising flour
2ozs melted margarine
Mix all the ingredients and press into a 7” square tin at least 1” deep. Bake at 135°C for 10 – 15 minutes
Filling
Mix 1 cup coconut with 1 small tin condensed milk, spread over base and bake until golden brown (10 – 15 minutes)
Icing
Mix together 1oz melted butter, 4ozs icing sugar, ½ tablespoon milk and a drop of pink colouring. Spread over filling. |
