Ingredients
8 small or 4 large fresh trout
1 tablespoon onion pepper
Salt
3 tablespoons olive oil
4 sprigs fresh thyme
4 tablespoons freshly squeezed lemon juice.
2 tablespoons clear honey
To complete:
2 cloves garlic, crushed
1lb leeks, washed, trimmed and sliced
1lb courgettes, washed and sliced
1 tablespoon chopped oregano
1 lb boiled potatoes
Method
- Rinse the trout fillets and pat dry with kitchen paper, Liberally sprinkle both sides with onion pepper and salt.
- Heat 1 tablespoon of oil in a grill pan and grill the trout for 2 – 3 mins on each side. Add the thyme, lemon juice and honey and grill for a further 2 – 3 mins.
- Meanwhile, heat the remaining oil in a large pan. Add the garlic, leeks and courgettes and stir fry for 5 – 7 mins.
- Stir the oregano and serve with the trout and the boiled potatoes.
