Mushroom & Onion Soup

Ingredients

½ lb mushrooms finely chopped
1 large onion finely chopped
1 tbsp flour
2 pints chicken stock
1 bouquet garni
Seasoning
¼ pint milk
¼ pint single cream
Parsley
Knob of butter

Method

  1. Melt butter, add mushrooms & onion, cover & cook for 5 mins.
  2. Add flour, milk & cook for 2 mins. Gradually stirring in stock & bring to boil
  3. Add the bouquet garni & seasoning
  4. Lower the heat & half cover, simmer for 20 mins.
  5. Discard the the bouquet garni & taste for seasoning
  6. Cool, freeze, thaw & add the cream, heat but don’t boil, sprinkle with parsley
