Ingredients
½ lb mushrooms finely chopped
1 large onion finely chopped
1 tbsp flour
2 pints chicken stock
1 bouquet garni
Seasoning
¼ pint milk
¼ pint single cream
Parsley
Knob of butter
Method
- Melt butter, add mushrooms & onion, cover & cook for 5 mins.
- Add flour, milk & cook for 2 mins. Gradually stirring in stock & bring to boil
- Add the bouquet garni & seasoning
- Lower the heat & half cover, simmer for 20 mins.
- Discard the the bouquet garni & taste for seasoning
- Cool, freeze, thaw & add the cream, heat but don’t boil, sprinkle with parsley
