Fruit Chutney

 Ingredients

8oz dried apricots, washed & chopped
8oz stoned dates, roughly chopped
12oz cooking apples, peeled, cored and chopped
8oz bananas, peeled and sliced
4oz onions, chopped finely
8oz light brown sugar
Grated rind & juice of ½ lemon
1 tsp. ground mixed spice
1 tsp. salt
¾ pint cider vinegar

Method

  1. Place all ingredients in a preserving pan and heat gently, stirring continuously until sugar has dissolved. Bring to boil and simmer gently for about 1 hour, stirring occasionally until mixture is thick.
  2. Spoon chutney into warmed, sterilised jars and cover with airtight vinegar-proof tops. Label and store in a cool, dry, dark place, allowing 2 to 3 months to mellow and mature.
