Cream Girdle Scones

Ingredients

8 oz self-raising flour
¼ tspn. salt
1 dessertspoon of castor sugar
1 oz margarine
½ teacupful of sweet milk
½ teacupful of cream

 

  1. Sift flour, salt and sugar into a bowl, rub in the fat.
  2. Add the milk and cream and mix to a soft, elastic dough.
  3. Turn out on to a floured board, knead lightly and roll out to about ½ inch thickness.
  4. Form into a round shape, then cut into round or triangular shapes.
  5. Cook on a hot, floured girdle. Heat the girdle slowly. To test the heat sprinkle a little flour on it, it should colour slightly in a few seconds, if it turns dark quickly, the girdle is too hot.

NB You could add 2 oz of currants or sultanas if you like to the mixture.
