Ingredients
8 oz self-raising flour
¼ tspn. salt
1 dessertspoon of castor sugar
1 oz margarine
½ teacupful of sweet milk
½ teacupful of cream
- Sift flour, salt and sugar into a bowl, rub in the fat.
- Add the milk and cream and mix to a soft, elastic dough.
- Turn out on to a floured board, knead lightly and roll out to about ½ inch thickness.
- Form into a round shape, then cut into round or triangular shapes.
- Cook on a hot, floured girdle. Heat the girdle slowly. To test the heat sprinkle a little flour on it, it should colour slightly in a few seconds, if it turns dark quickly, the girdle is too hot.
NB You could add 2 oz of currants or sultanas if you like to the mixture. |
