Coeur a la Creme

Ingredients

1 (8oz) carton cottage cheese
1 ½ oz caster sugar
2 tbspns. fresh double cream
2 egg whites
Fresh strawberries or raspberries and sugar
1 (5 fl oz) carton fresh cream

 

Method

  1. Using a wooden spoon, press the cottage cheese through a sieve into a bowl. Mix in the sugar and cream
  2. Whisk the egg whites until very stiff, then fold into the cottage cheese mixture
  3. Spoon the cheese mixture into a serving dish and smooth over the top. Scatter with sugared strawberries or raspberries. Serve with cream

A delicious hot summer’s day dessert. Often made richer by folding in more double cream and then drained overnight in special heart – shaped moulds hence its name.
