Chopped Chicken & Prawn Soup

Ingredients

100g / 4oz portion boneless chicken breast
1 litre / 1 ¾ pints chicken stock
50g / 2oz vermicelli
50g / 2oz shelled prawns, chopped
Salt & pepper
Chopped chives

Method

  1. Place the chicken breast in a saucepan with the stock and bring slowly to the boil, skim if necessary, cover and simmer for 20 minutes
  2. Lift out the chicken breast, crumble the pasta into the stock, bring to the boil again and cook for 4–6 minutes, or until the pasta is tender
  3. Meanwhile, cut the chicken into strips, stir the chicken strips and prawns into the soup, bring back to the boiling point again
  4. Add salt and pepper to taste, serve hot sprinkled with chives

Note:

Good as a pasta slimming diet, this would serve 4 and each portion worth about 120 calories.
