Ingredients
100g / 4oz portion boneless chicken breast
1 litre / 1 ¾ pints chicken stock
50g / 2oz vermicelli
50g / 2oz shelled prawns, chopped
Salt & pepper
Chopped chives
Method
- Place the chicken breast in a saucepan with the stock and bring slowly to the boil, skim if necessary, cover and simmer for 20 minutes
- Lift out the chicken breast, crumble the pasta into the stock, bring to the boil again and cook for 4–6 minutes, or until the pasta is tender
- Meanwhile, cut the chicken into strips, stir the chicken strips and prawns into the soup, bring back to the boiling point again
- Add salt and pepper to taste, serve hot sprinkled with chives
Note:
Good as a pasta slimming diet, this would serve 4 and each portion worth about 120 calories. |
