Chocolate Brittle

Ingredients

50g / 2oz butter or margarine
2 tbspns. golden syrup
2 tbspns. cocoa powder
4 tbspns. castor sugar
50g / 2oz durum wheat bran

 

Method

1. Place the butter or margarine and golden syrup in a large saucepan and stir with a wooden spoon over gentle heat until the fat has melted.
2. Add the cocoa and sugar and stir well until the mixture is smooth.
3. Remove the pan from the heat and stir in the bran.
4. Spread this mixture in a greased Swiss roll tin and place in a moderate oven (180°C/350°F/Gas Mark 4) for 8 minutes.
5. Remove the tin from the oven and mark the mixture into 2.5cm/1 in. squares with a knife.
6. Leave until cold, then break the brittle into pieces.
7. Store in an airtight container.
