Bramble Mouse

Ingredients

1 lb Brambles
4 oz Caster sugar
2 tablespoons lemon juice
3 tablespoons of cold water
½ oz gelatine
¼ double cream
3 egg whites

Method:

  1. Put brambles, sugar and lemon juice in saucepan and simmer until tender
  2. Melt gelatine with the cold water until spongy
  3. Add the bramble mixture to the gelatine and mix and then sieve.
  4. Leave the mixture until nearly set.
  5. Whisk egg whites until stiff then add cream, add to the puree and freeze.
