Ingredients
1 lb Brambles
4 oz Caster sugar
2 tablespoons lemon juice
3 tablespoons of cold water
½ oz gelatine
¼ double cream
3 egg whites
Method:
- Put brambles, sugar and lemon juice in saucepan and simmer until tender
- Melt gelatine with the cold water until spongy
- Add the bramble mixture to the gelatine and mix and then sieve.
- Leave the mixture until nearly set.
- Whisk egg whites until stiff then add cream, add to the puree and freeze.
